The day had to come. My first baking fail. On Wednesday I set about using my new ring shaped baking tin and Hummingbird Bakery (the rest of the recipes in their book have worked very well) blueberry cake recipe for the first time. And I had a fail. I cooked it for slightly longer than the book said (it was still wobbling at the suggested time), tested it with a skewer and all seem fine. Good-o I thought, it’s almost cake time. I let it cool a while, before turning it out and oh dear! Oh dear me, uncooked cake mix oozed out and the rest stayed firmly put in the tin (blackened crust due to extra cooking time). I may have cried. In fact I did cry. A lot. I wanted cake dammit.
6 eggs and £3 worth of blueberries (not to mention the other ingredients) went into that stupid thing. I was not pleased. Mr Thrifty being as much of a cake lover as me was obviously disappointed, so insisted we fixed the situation. God love that man. We peeled off the burnt(ish) top layer, poured some of the mix out, shoved it back in the oven and hey presto an hour later it was done (so actually Hummingbird Bakery book, that’ll be 1hour 40mins rather than 40mins to cook your cake). Okay, so it’s a wee bit on the crumbly side (what do you expect when your husband goes at the tin with a butter knife in a bid to free cake?) in the middle but with a plonk of some cream cheese icing and blueberries it was saved.
